Creating a Fabulous Dessert Bar

Just recently, I created a Dessert Bar for a 4th of July party

This array of desserts fed 70 guests.  There was a variety of sweets to choose from.  Cookies, brownies, cupcakes, chocolate pretzels, petit fours, caramel candies, chocolate covered apricots, chocolate covered jelly candies, and chocolate covered shortbread.

Whoopie pies were very easy. Start with a cake mix, adjust the water, egg and oil (reduce by 2/3rds). Load batter into pastry bag and pipe disks on a cookie sheet, then bake for 10 minutes.  Cool, and use two disks for each pie. Use you favorite frosting recipe as the filling. Finish with drizzled white chocolate.

For the Petit Fours, bake cake in a jellyroll pan. Make desired filling and place between the two layers of jelly rolls.  Freeze the layered cake. Cut into squares or circles. Drip in melted chocolate.

For shortbreads - bake your favorite shortbread recipe, cut into squares or circles while still warm from the oven. Dip in melted chocolate and place each into a mini cupcake paper.
