Decadent Carrot Cake

This carrot cake is full of yummy goodness. Try it out and let me know what you think!!

2 1/2 cups all purpose flour
1/2 tsp salt
2 tsp cinnamon
3/4 tsp ground cloves
1 tsp ground ginger
3/4 tsp nutmeg
1 1/2 tbsp baking powder
Sift the above ingredients together

In separate bowl, mix:
3/4 cup vegetable oil
1 cup firmly packed light brown sugar
1/2 cup granulated sugar
4 large eggs
Add dry ingredients to this mixture, blend well

Stir in the following:
2 cups grated carrots
1 cup shredded coconut
3/4 cup golden raisins
8 oz can of crushed pineapple
1 cup applesauce
1/2 cup walnuts

Pour into three 8 inch round pans, bake at 350 degrees F, for 28 minutes.

Cool on wire rack, chill for one hour - always ice your cakes cold.

Icing Recipe:
2 pounds powdered sugar
1 cup softened butter
8 oz of softened cream cheese
1/2 cup of Irish Cream Coffee Creamer
Blend well.
